Baked Chicken Breasts Hmmm Yummy

Easy chicken recipes are just about my favorite.
Everyone seems to love chicken and no matter what healthy diet you are on, it works.
Chicken is one of the low fat protein foods as well as a low carb food.
This chicken recipe will work for you if you are looking for low carb recipes.
The ingredient amounts are not exact here because it works best if you adjust the seasonings to your taste.
This is a recipe I created with things I happened to have on hand. Sometimes the best results start out that way.
Baked Chicken Breast:
Ingredients:
Boneless chicken breasts
or other chicken pieces of your choice
Garlic powder
Onion powder
Salt and pepper
Tomato slices
Olive oil
Parmesan cheese
Spray a glass casserole dish with non-stick spray. Use whatever size casserole fits the amount of chicken you are using.
Sprinkle each chicken breast with salt and pepper, garlic powder and onion powder. I use a generous amount of the garlic and onion powders to coat the breasts on both sides. They add a lot of favor with no fat. Do not use garlic and onion salt, or if you do, don’t salt the meat, as it will be too salty. Place the chicken pieces in the baking dish.
Lay a large slice or two small slices of tomato on each breast. Drizzle with a bit of olive oil. No need to use a lot. Even a teaspoon makes a big difference in the taste and texture when it is done.
Bake at 375ºF for about 20 minutes.
Sprinkle 1 tablespoon of Parmesan cheese on each chicken breast. Bake for another 5 minutes.
Boom your done and ready to eat all under an Hour Tops!  (Serve this with a big salad for a complete dinner.) Sorry Sharon just have to add my Veggies :)

The Layer Salad

Here is another very cool dish that is easy to do, I call it the Layer Salad. Has to be one of my Favorite Dishes.

This seven layer salad is easy to prepare and looks beautitul, especially if you have it in a deep clear glass bowl that allows you to see all the goodies layered inside.

Whether you can see the 7 layers or not, it tastes just as good.

This easy make ahead layered salad is great to serve at a buffet or pot luck.

It makes a delicious summer salad entree.

The 7 Layer Salad

2 cups mayonnaise or Miracle Whip                         lettuce
1 tablespoon sugar
1 head of lettuce, shredded
1 cup celery, diced
1/2 cup sweet red pepper, diced
4 hard-cooked eggs, chopped
10 ounces frozen green peas, uncooked
1 small sweet onion, diced
8 slices cooked bacon, crumbled
1/2 pound cheddar cheese, grated

Combine the mayonnaise and sugar. Mix and refrigerate it until you finish making the salad.

Layer the rest of the ingredients in the following order: a layer of lettuce on the bottom of the bowl, then
a layer of celery
a layer of sweet pepper
a layer of chopped eggs
a layer of peas
a layer of onions
a layer of crumbled bacon

Spread the mayonnaise/sugar mixture over the top of the salad like cake icing. Sprinkle grated cheese evenly over it all. Seal the bowl with plastic wrap and refrigerate overnight (or for 8 to 12 hours before serving).

This salad looks beautiful served in a glass bowl so you can see the layers. Mix it all together just before serving,  Serves 8.
